  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 (3.4 oz) box instant vanilla pudding mix
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups crushed vanilla wafers
  • 1 cup white chocolate chips (optional)

Instructions

  • Prepare the bananas – Mash the bananas until smooth and creamy.
  • Mix the wet ingredients – In a large bowl, cream the butter and sugars until light and fluffy. Add the mashed bananas, vanilla extract, pudding mix, and eggs. Beat until well combined.
  • Combine the dry ingredients – In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring until fully incorporated.
  • Fold in mix-ins – Gently fold in the crushed vanilla wafers and white chocolate chips, if using.
  • Chill the dough – Cover the dough and refrigerate for 30 minutes to help prevent excessive spreading.
  • Preheat the oven – Set the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • Scoop and bake – Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes, or until the edges are golden brown.
