- 2 tbsp all-purpose flour
- 1/2 cup red wine (or beef broth)
- 1 cup beef drippings or broth
- 1 tsp Worcestershire sauce
- Salt and pepper, to taste
Instructions
Prepare the Beef: Take the beef roast out of the refrigerator 30 minutes before cooking to bring it to room temperature. Preheat your oven to 375°F (190°C).
Season the Roast: In a bowl, mix butter, rosemary, thyme, garlic, salt, pepper, and smoked paprika. Rub this mixture generously over the beef.
Sear the Beef: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the beef on all sides until browned, about 2-3 minutes per side.
Roast the Beef: Transfer the skillet to the oven and roast for 45-60 minutes (or until internal temperature reaches 130°F (54°C) for medium-rare). Use a meat thermometer for accuracy.
Rest the Beef: Remove from the oven, tent with foil, and let it rest for 15 minutes before slicing.
Make the Gravy: In the same skillet, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly add red wine and beef broth, stirring continuously. Add Worcestershire sauce, then simmer until thickened. Season with salt and pepper.
Serve: Slice the beef and drizzle with warm gravy. Serve with mashed potatoes, roasted vegetables, or your favorite Christmas sides.
