Ingredients

Scale

For the Pasta:

  • 12 oz pasta (penne, fettuccine, or your favorite)
  • 1 tbsp salt (for boiling water)

For the Chicken:

  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp olive oil

For the Boursin Sauce:

  • 1 tbsp butter
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 package (5.2 oz) Boursin Garlic & Fine Herbs cheese
  • ½ cup grated Parmesan cheese
  • ½ tsp red pepper flakes (optional, for a little heat)
  • ½ cup pasta water (reserved)
  • 1 tbsp fresh parsley (chopped, for garnish)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to the package instructions until al dente.
  3. Reserve ½ cup of pasta water, then drain and set aside.

Step 2: Cook the Chicken

  1. While the pasta cooks, season the chicken pieces with salt, pepper, garlic powder, and onion powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken and cook for 5-6 minutes, flipping occasionally, until golden brown and cooked through.
  4. Transfer the cooked chicken to a plate and set aside.

Step 3: Make the Creamy Boursin Sauce

  1. In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
  2. Pour in the heavy cream and stir to combine.
  3. Add the Boursin cheese, breaking it apart with a spoon as it melts into the sauce.
  4. Stir in the Parmesan cheese and red pepper flakes (if using).
  5. Simmer the sauce for 2-3 minutes, stirring occasionally, until smooth and creamy.

Step 4: Combine & Serve

  1. Return the cooked chicken to the skillet and stir to coat it in the sauce.
  2. Add the drained pasta and toss everything together. If needed, add some reserved pasta water to loosen the sauce.
  3. Remove from heat and sprinkle with fresh parsley.

Notes

Serving Suggestions

  • Serve with garlic bread or a side of roasted vegetables.
