- 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
- Salt and pepper, to taste

Instructions
- Prepare the Chicken Breasts
Begin by patting the chicken breasts dry with a paper towel. Using a sharp knife, create a pocket in the thickest part of each breast, ensuring you don’t cut all the way through. Season both the outside and the pocket with salt and pepper. - Stuff the Chicken
Take a generous amount of Boursin cheese and stuff it into each pocket. Use your fingers or a spoon to ensure the cheese is evenly distributed. Secure the opening with toothpicks to prevent the cheese from oozing out during cooking. - Sear the Chicken
Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and sear for 3–4 minutes per side, until golden brown. Remove the chicken from the skillet and set it aside. - Create the Sauce
In the same skillet, melt the butter and sauté the minced garlic until fragrant (about 1 minute). Add the chicken broth, heavy cream, and remaining Boursin cheese. Stir until the cheese has melted and the sauce is smooth. Sprinkle in the thyme and adjust seasoning with salt and pepper as needed. - Cook the Chicken in the Sauce
Return the seared chicken breasts to the skillet. Lower the heat to medium, cover the skillet, and let the chicken simmer in the sauce for 10–12 minutes, or until fully cooked (internal temperature of 165°F or 75°C). Baste the chicken with the sauce occasionally for added flavor. - Serve and Garnish
Remove the toothpicks from the chicken and transfer the breasts to a serving plate. Pour the creamy sauce over the chicken and garnish with chopped parsley or chives. Serve immediately.
