For the Roast:
- 4–5 lbs beef rib roast (or top sirloin)
- 2 tablespoons coarse salt
- 1 tablespoon freshly ground black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter, softened
For the Au Jus:
- 1 cup beef broth
- ½ cup red wine
- 1 teaspoon Worcestershire sauce
- 1 clove garlic, minced
- 1 sprig fresh rosemary
Instructions
- Preheat the oven to 450°F (230°C). Place the roast on a rack in a roasting pan.
- Season the roast: In a small bowl, mix salt, pepper, garlic, rosemary, thyme, mustard, olive oil, and butter. Rub this mixture all over the beef.
- Roast at high heat for 20 minutes, then reduce the oven temperature to 325°F (163°C).
- Continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches:
- 120°F (49°C) for rare
- 130°F (54°C) for medium-rare
- 140°F (60°C) for medium
- Rest the beef: Remove the roast from the oven, tent it with foil, and let it rest for 20 minutes before slicing.
- Prepare the au jus: In a saucepan, heat the beef drippings, add garlic, broth, wine, Worcestershire sauce, and rosemary. Simmer for 10 minutes until slightly reduced. Strain and serve warm with the beef.
Notes
- For extra flavor, marinate the beef with the seasoning mix overnight.
- For a crispy crust, broil the roast for 3-5 minutes at the end.
- Letting the meat rest before slicing ensures juiciness.
