For the Roast:

  • 45 lbs beef rib roast (or top sirloin)
  • 2 tablespoons coarse salt
  • 1 tablespoon freshly ground black pepper
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, softened

For the Au Jus:

  • 1 cup beef broth
  • ½ cup red wine
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic, minced
  • 1 sprig fresh rosemary

Instructions

  1. Preheat the oven to 450°F (230°C). Place the roast on a rack in a roasting pan.
  2. Season the roast: In a small bowl, mix salt, pepper, garlic, rosemary, thyme, mustard, olive oil, and butter. Rub this mixture all over the beef.
  3. Roast at high heat for 20 minutes, then reduce the oven temperature to 325°F (163°C).
  4. Continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches:
    • 120°F (49°C) for rare
    • 130°F (54°C) for medium-rare
    • 140°F (60°C) for medium
  5. Rest the beef: Remove the roast from the oven, tent it with foil, and let it rest for 20 minutes before slicing.
  6. Prepare the au jus: In a saucepan, heat the beef drippings, add garlic, broth, wine, Worcestershire sauce, and rosemary. Simmer for 10 minutes until slightly reduced. Strain and serve warm with the beef.

  • For extra flavor, marinate the beef with the seasoning mix overnight.
  • For a crispy crust, broil the roast for 3-5 minutes at the end.
