- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup buttermilk
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter
- Cooking oil or butter for frying
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk the buttermilk, egg, vanilla extract, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined. Do not overmix.
- Heat a non-stick pan or griddle over medium heat and lightly grease with oil or butter.
- Using a teaspoon or small squeeze bottle, drop small amounts of batter onto the pan to form mini pancakes.
- Cook for about 1-2 minutes, until bubbles form on the surface, then flip and cook for another 30-60 seconds until golden brown.
- Repeat with the remaining batter.
- Serve warm with syrup, honey, fruit, or yogurt.
Notes
- If the batter is too thick, add a little more buttermilk to adjust consistency.
- Use a piping bag or squeeze bottle for uniform mini pancakes.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a dry pan or microwave before serving.
