Description

Ingredients

  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • Cooking oil or butter for frying

Instructions

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk the buttermilk, egg, vanilla extract, and melted butter until well combined.
  • Pour the wet ingredients into the dry ingredients and mix gently until just combined. Do not overmix.
  • Heat a non-stick pan or griddle over medium heat and lightly grease with oil or butter.
  • Using a teaspoon or small squeeze bottle, drop small amounts of batter onto the pan to form mini pancakes.
  • Cook for about 1-2 minutes, until bubbles form on the surface, then flip and cook for another 30-60 seconds until golden brown.
  • Repeat with the remaining batter.
  • Serve warm with syrup, honey, fruit, or yogurt.

Notes

  • If the batter is too thick, add a little more buttermilk to adjust consistency.
  • Use a piping bag or squeeze bottle for uniform mini pancakes.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a dry pan or microwave before serving.
