Instructions

Roast Capon or Turkey

  1. Preheat oven to 350°F (175°C).
  2. Mix softened butter with garlic, thyme, rosemary, sage, salt, and pepper. Rub the mixture under the skin and over the bird.
  3. Place in a roasting pan, add white wine and stock. Roast for 2.5 to 3 hours, basting every 30 minutes.

Potato Gratin

  1. Preheat oven to 375°F (190°C).
  2. Layer sliced potatoes in a buttered baking dish.
  3. Heat cream with garlic, nutmeg, salt, and pepper. Pour over potatoes and sprinkle with Gruyère cheese.

Bûche de Noël

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
