Instructions

  1. In a medium saucepan over medium heat, combine water, butter, sugar, and salt. Stir until butter melts and mixture begins to simmer.
  2. Reduce heat to low and add the flour all at once. Stir vigorously with a wooden spoon until a dough forms and pulls away from the sides of the pan. Cook for about 1 to 2 minutes, then remove from heat.
  3. Transfer the dough to a mixing bowl and let it cool for about 5 minutes.
  4. Add the egg and vanilla extract to the slightly cooled dough. Mix until fully incorporated and smooth.
  5. Transfer the dough to a piping bag fitted with a large star tip.
  6. In a deep skillet or saucepan, heat about 2 inches of vegetable oil to 375°F (190°C).
  7. Pipe 4 to 6-inch strips of dough into the hot oil, cutting the ends with scissors. Fry in batches, turning occasionally, until golden brown, about 2 to 3 minutes per side.
  8. Remove with a slotted spoon and drain on a paper towel-lined plate.
  9. In a shallow dish, mix the granulated sugar and cinnamon. Roll the warm churros in the mixture until fully coated.
  10. Serve immediately with chocolate or caramel sauce
