  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ½ cup sour cream

For the Topping (Optional)

  • ½ cup dulce de leche or caramel sauce
  • ¼ teaspoon sea salt
  • Whipped cream for serving

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

  2. Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, sugar, cinnamon, and melted butter. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then let cool.

  3. Make the filling: In a large bowl, beat the cream cheese until smooth. Add sugar and mix until incorporated.

  4. Add the eggs one at a time, mixing on low speed until just combined. Stir in vanilla, cinnamon, and sour cream.

  5. Pour the batter over the crust and smooth the top.

  6. Bake for 50-55 minutes, or until the center is set but slightly jiggly.

  7. Cool the cheesecake in the oven with the door slightly open for 1 hour. Then refrigerate for at least 4 hours or overnight.

  8. Top with dulce de leche before serving, if desired.

  9. Slice and serve chilled or at room temperature with whipped cream.
